DNA-altering technology has created strains of yeast that enhance aroma and flavor production by releasing aromatics, called thiols, from malt and hops at levels not previously possible.
We’ve used this yeast to coax a unique burst of tropical scents and citrus flavors from an IPA loaded with El Dorado, Nelson and Galaxy hops.
